Red Lentil Stew


This is what I made today so simple, so tasty 1 diced red onion 2 cloves diced garlic 1 pepper chopped 1 aubergine chopped (salted for 20 mins and rinsed with fresh water) 1 can chopped tomatoes or equivalent fresh cherry tomatoes 1 veg stock cube or tbsp bouillon powder 1/2 tsp dried chilli flakes Large pinch ground cinnamon & turmeric & paprika Fresh/dried herbs 1 mug dried red lentils 2 handfuls spinach Salt optional Freshly ground pepper to taste Water to cover (maybe to top up if necessary) Stir fry all the veg until slightly softened. I like to use coconut, olive oil or rapeseed my fave is coconut. Add the spices for 30 secs or so. Add chopped toms, lentils, herbs, stock & water. Bring up to boil and then lower to a simmer for 30 mins. Check every 10 mins to stir and top up water. You want the consistency of a stew unless you fancy soup. Stir in the spinach towards the last 5 mins of cooking. Enjoy! M x
